
A hands on cooking course using local ingredients, it's an introduction to Newfoundland gourmet food and recipe sharing.
Traditional and Gourmet Cooking
Day One: Introduction
The first day will be an orientation to Tuckamore Lodge and the staff.
Day Two: Stocking the pantry/cellar
Gourmet cooking depends upon having the right ingredients. In the morning, a review of herbs and spices, dry and wet ingredients, and wines and liqueurs will whet your appetite for the evening's menu planning session that will be hosted over a wine and cheese social. In the afternoon, visit the historic capital of the French fishery at Conche and take a local boat tour to see icebergs and whales.
Day Three: Table settings/cocktails
In the morning visit L'Anse aux Meadows/Norstead. Lunch at one of the top 100 restaurants in Canada, the Norseman Café. A stop at the Dark Tickle Shoppe will provide information on local berries and their uses in cooking. In the late afternoon, a session on cooking utensils and table settings, followed by instructions on hosting a cocktail party, preparing hors d'oeuvres and stocking the bar.
Day Four: Brunch and desserts
The morning will be spent preparing breakfast and brunch menus and identifying healthy alternatives to start the day. In the afternoon, participants will prepare a selection of desserts for the evening meal.
Day Five: Light lunches and Entrees
In the morning, share recipes for lunches and entrées. Take a hike to Salmon River to learn about edible plants. Return to the lodge for a session on preparing light lunches / soups and salads. The afternoon will be spent preparing for the final meal of the evening / a party featuring local musicians and storytelling. Participants will prepare a selection of traditional and gourmet entrées.
Day Six: Wrap-up
A review of the week's activities and departure.
All participants are required to sign a waiver and release contract in order to participate in the program. Deposits of 50% per person are required on package bookings. All deposits are due within 14 days of booking. Full deposits are required 45 days prior to departure. When reservations are received less than 45 days prior to departure, a full deposit is required within 24 hours.

CA$2,800 per person - Double Occupancy (Canadian dollars).
Harmonized Sales and Service Tax (HST) of 13% must be paid to the lodge for all trips with a 6.5% rebate to non-Canadian residents.
Deposits are Non-refundable.
